 Be Aware: Canada Visa Renewal

My visa will expire on July 28 . My college I-20 has my expected graduating date of May 2009.I am thinking about going to Canada to renew my F-1 visa so that I can go to Nepal in December. Can you guys suggest me on the following?
1. Documents that i need (apart from passport, I-20, transcript)
2.Do they ever deny visas ( i have never been out of status , have a GPA of 3.6, enrolled in a 4yr college)?
3. How long do I have to wait to get an appointment date?
 
I would really appreciate your help.

For F1 Visa It may be better to go to Nepal instead of going to other country. US Embassy has strict policy for student visas as compared to H1 and J1
